Pancakes are among everybody's favorite breakfast meals. They come in so many different versions – with seasonal fruit, fresh or dried berries, maple syrup, nuts, or chocolate. Extremely easy to make, healthy, and nutritious...What more do you need for breakfast?
This time, I have decided to take a classic pancake recipe and turn it into something completely different and delicious – oven-baked maca pancake. This delicious combination can be served immediately or even stored in the refrigerator up to a week and served as a light afternoon dessert. When it comes to berries, you can experiment a bit and mix different types – blueberries, strawberries, raspberries, cranberries, blackberries, or any other berries you prefer. Sprinkle the prepared pancake mixture with them, place in the oven and simply cook until completely set. What a wonderful way to create something mouthwatering and beautiful for your family.

When done, I like to dust my pancake with some classic confectioners' sugar. It will add just the right amount of sweetness you need and make this recipe even prettier. The rest is really up to you – you can serve them immediately or drizzle with maple syrup or melted butter. Enjoy!
