Ingredients

  • 1 Cup All-Purpose Flour
  • ¼ Cup Sugar
  • 1 ½ Tsp Baking Powder
  • ½ Tsp Salt
  • ¾ Cup Milk
  • 3 Tbsp Butter
  • 1 Large Egg
  • 1 Tsp Maca Powder
  • 1 Cup Berries Of Your Choice
  • Confectioners' Sugar, Optional For Serving

DIRECTIONS

  • Preheat the oven to 375 degrees F. In a medium-sized bowl, combine together flour, two tablespoons of sugar, baking powder, salt, and maca powder. Whisk well and set aside.

  • In another bowl, combine together two tablespoons of melted butter, egg, and milk. Beat until fully incorporated and then add the flour mixture. Mix all well and set aside.

  • Place a 10-inch cast iron skillet in the oven and heat up. Remove from the oven and add the remaining butter, swirling to coat well.

  • Pour in the batter and sprinkle with berries. You can use cranberries, blueberries, blackberries, raspberries, or even fresh seasonal red currants.

  • Sprinkle with the remaining sugar and cook for about 25 minutes or until lightly golden brown.

  • Remove from the oven and cool for a while. Optionally, dust with confectioners' sugar and serve immediately.

This time, I have decided to take a classic pancake recipe and turn it into something completely different and delicious – oven-baked maca pancake. This delicious combination can be served immediately or even stored in the refrigerator up to a week and served as a light afternoon dessert. When it comes to berries, you can experiment a bit and mix different types – blueberries, strawberries, raspberries, cranberries, blackberries, or any other berries you prefer. Sprinkle the prepared pancake mixture with them, place in the oven and simply cook until completely set. What a wonderful way to create something mouthwatering and beautiful for your family.
