Ingredients

  • 1 ½ cup cashews
  • 1 cup dates, pitted
  • 1 tbsp coconut butter
  • ¾ cup shredded coconut
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp maca powder
  • 2 tsp rum extract

Utensils

  • Food processor
  • Parchment paper
  • Baking pan

DIRECTIONS

    Combine cashews, dates, coconut butter, cocoa powder, maca powder, and rum extract in a food processor and process until well combined and crumbly. Make sure not to overprocess the ingredients because you want these brownies to have a nice and crunchy texture.

    Line a small baking pan with some parchment paper. Add the mixture to the pan and firmly press with your hands to flatten the surface as evenly as possible. Refrigerate for one hour.

    Remove brownies from the refrigerator and cut into small squares (about one inch). Generously sprinkle with shredded coconut and serve.

No bake desserts are always my favorite recipes – they usually contain a couple of healthy ingredients and take no time at all to prepare which is just perfect for everybody's busy schedule.

This recipe is exactly that – it's based on a couple of superfoods which (especially when combined together) will give your body a generous amount of nutrients, a nice boost of energy, they will reduce those nasty afternoon sugar spikes, and above all – they taste absolutely perfect.

A combination of dates and cocoa powder is my number one option to get a nice and gentle mocha flavor which I adore! But when combined with a world's number one energy booster – maca powder there is really no need the second cup of coffee most of us usually drink during the day.

These lovely mini snacks are an excellent breakfast to go (when you don't have the time to cook in the morning), afternoon snack, or a light dessert.

Sprinkle with some shredded coconut for even more taste and keep in the refrigerator up to a week (or up to 3 months in the freezer). Enjoy!
