Ingredients

  • 15 dates
  • 3 tbsp coconut butter
  • 1 tbsp matcha green tea powder
  • 1 tsp vanilla extract
  • 3 tbsp shredded coconut
  • 2 tbsp cane sugar
  • ½ tsp salt

Utensils

  • Blender or food processor

DIRECTIONS

  • Soak dates for about an hour or boil them for 10 minutes. Drain and place in a powerful blender or a food processor.

  • Microwave the coconut butter for about 30 seconds or until soft. Transfer to a blender along with cane sugar and salt. Add shredded coconut and pulse for 30 seconds.

  • Now add the remaining ingredients and sprinkle with matcha green tea powder. Pulse until completely combined. You want the mixture to be sticky enough to form macaroons easily.

  • Remove the mixture from the blender and place on a clean work surface. Shape into a ball to form a macaroon and optionally sprinkle with some more matcha green tea powder.

  • Chill for a while before serving.

For a while now, I've been looking for the best macaroon modification that is gluten-free and vegan-friendly at the same time. A couple of weeks ago I have discovered this no-bake recipe that is just perfect.

Finely chopped dates are combined with shredded coconut, matcha green tea powder, and some coconut butter into wonderful bite-sized snacks that are packed with nutrients and good flavor. I used some cane sugar instead of my usual sweeteners which definitely added an extra kick to this fantastic recipe.

So, if you have some shredded coconut stash lying around, take 15 minutes of your time and transform it into the best snack for the entire family.

If you're feeling a bit creative, you can add some finely chopped almonds for an even crunchier texture of your macaroons. However, I don't recommend any other nuts because they will significantly change the original macaroon flavor you wish to achieve. And finally, never underestimate the power of chocolate – find yourself a nice pack of vegan-friendly chocolate and dip each macaroon in it. I promise you won't regret it.
