Ingredients

  • 2 cups rolled oats
  • 2 ripe bananas
  • 1 tbsp matcha green tea powder
  • 1 tsp baking powder
  • ¼ cup almonds, chopped
  • 2 tbsp hazelnuts, finely chopped
  • 6 dates, pits removed
  • 2 tbsp chia seeds
  • 1 ½ cup sour cherry jam

Utensils

  • Baking pan
  • Parchment paper
  • Food processor
  • Mixing bowl

DIRECTIONS

  • Preheat the oven to 375 degrees F. Line a small rectangular baking pan with some parchment paper and set aside.

  • Place half of the oats in a food processor and process until fine mince. Transfer to a large mixing bowl and add matcha green tea powder and baking powder. Set aside.

  • Place bananas and dates in a food processor and process until smooth mixture. Combine this mixture with the oat mixture and mix all well with a spoon (or even your hands). Add the remaining oats and mix again. Transfer the mixture into the prepared baking pan, leaving about a ¼ cup of the mixture for topping. Using your hands, kitchen spatula, or a spoon, flatten the surface as evenly as possible.

  • Top everything with jam and sprinkle with chia seeds, almonds, and hazelnuts. Finally, add the remaining oat mixture and carefully mix with the jam.

  • Bake for 25-30 minutes.

  • When done, remove from the oven and cool completely before slicing.

This crumble cake is based on crispy rolled oats, nuts, seeds, and ripe bananas to hold everything together. Add a couple of dates for a sticky mixture you can manipulate with and top with your favorite jam. That's all it takes to prepare this fabulous dessert.

When it comes to jam topping, basically you can use any type of jam you have on hand. However, I have decided to try out this combination with sour cherry jam because the base is already sweet enough and this jam will create a perfect balance.
