Ingredients

  • 2 cups fresh goat's cheese (can be replaced with cottage cheese)
  • 2 tbsp coconut butter
  • 2 tbsp psyllium powder
  • 1 tsp vanilla extract
  • 2 tbsp matcha green tea powder
  • ¼ cup shredded coconut
  • ¾ cup powdered sugar (can be replaced with stevia powder)

Utensils

  • Food processor
  • Baking pan
  • Kitchen spatula
  • Parchment paper

DIRECTIONS

  • Line a medium baking pan with some parchment paper and set aside.

  • In a food processor, combine together goat's cheese, matcha green tea powder, vanilla extract, and sugar. Process until completely smooth and then add psyllium powder. Mix well again and transfer to the prepared baking pan.

  • Using a kitchen spatula, flatten the surface as evenly as possible and refrigerate for at least one hour.

  • When done, cut into equal brownies and coat each with shredded coconut.
