Ingredients

  • 3 cups all-purpose flour
  • 1 ½ cup sugar
  • ½ cup Zen Spirit matcha powder
  • 1 tsp baking powder
  • 1 ¼ tsp salt
  • 6 eggs
  • 1 ½ cup butter, softened
  • 1 cup buttermilk
  • 2 tbsp vanilla extract
  • Matcha frosting:
  • 3 cups powdered sugar
  • ¼ cup milk
  • 2 tbsp Zen Spirit matcha powder
  • 2 tsp vanilla extract

DIRECTIONS

  • Preheat the oven to 350°F. Spray a 10-12 cup bundt cake pan with some cooking spray and set aside.

  • In a bowl of a stand mixer, combine together all-purpose flour, sugar, Zen Spirit matcha powder, baking powder, and salt. Mix all well.

  • Add eggs, butter, buttermilk, and vanilla extract. With a paddle attachment on, beat well on medium speed until completely smooth.

  • Transfer the batter to the prepared bundt pan and bake for 1 hour or until a toothpick inserted in the middle comes out clean.

  • Remove from the oven and cool completely before removing the cake from the pan.

  • Meanwhile, prepare the frosting. Add sugar to a medium bowl. Pour in the milk and add vanilla extract and Zen Spirit matcha powder. Using a hand mixer, beat well until completely smooth. Pour the frosting over the chilled bundt cake and serve immediately.

Adding a generous amount of Zen Spirit matcha powder to this rather simple bundt cake recipe will definitely make everybody ask for more. A rich and aromatic flavor of matcha green tea powder is perfectly completed with a good amount of vanilla extract and creates a wonderful somewhat ‘vegetable’ flavor with a lingering sweet aftertaste. The recipe is quite easy to prepare as well – you simply have to combine a couple of simple ingredients into a bowl and beat until completely smooth. Then, bake your matcha bundt cake until a toothpick inserted in the middle comes out completely clean (about an hour will be enough).

As for the topping, a frosting made with some more matcha green tea powder will look gorgeous and taste truly delicious. Add a good amount of powdered sugar (which can be replaced with powdered erythritol) and two tablespoons of Zen Spirit matcha powder. Beat the mixture with some milk and vanilla until you have created perfectly smooth green frosting for your bundt cake.
