Preheat the oven to 350 degrees. Lightly spray the muffin pan with some cooking spray and set aside.
In a large mixing bowl fitted with a paddle attachment, combine sugar, egg yolk, butter, vanilla extract, and salt. Beat well on medium speed for 2-3 minutes, or until light and fluffy. Gradually, add flour and continue to beat for 2 more minutes. Finally, add ¾ of the chopped chocolate and beat until fully incorporated – for 2 minutes.
Form the cookie shots inside the molds making the walls about ¼ inch thick. Bake for 20 minutes.
Remove from the oven and cool completely.
Meanwhile, melt the remaining chocolate in the broiler or a microwave oven. Dip chilled cookie cups into melted chocolate and optionally sprinkle with some matcha green tea powder. Transfer to the refrigerator to cool completely.
