This elegant triple-layered parfait is a fantastic idea for a healthy breakfast or a wonderful dessert. It’s a delicious combination of two different chia pudding flavors and a creamy peanut butter layer. The preparation is also quite simple and it takes about 15 minutes to prepare this lovely treat.
For the chocolate layer, you will need some heavy cream (which can be replaced with full-fat coconut cream for the dairy-free version), Zen Spirit cacao powder and Zen Spirit chia seeds. You can add some sweetener to taste such as agave syrup, maple syrup or coconut nectar. Optionally, you can add some stevia for a sugar-free option. A good amount of high-quality dark chocolate will improve the taste of the pudding but it’s completely optional. Stir in egg yolks and add a few drops of vanilla extract and cook over the low heat until the mixture has completely thickened. Let the pudding sit while you prepare the second chia pudding layer by simply combining Zen Spirit chia seeds with some milk, sweetener to taste and vanilla extract. Allow the chia to soak the milk and start preparing your parfait.
For the peanut butter layer, melt some peanut butter in a microwave and sprinkle with finely chopped peanuts. Melt the peanut butter until nicely creamy when you stir it with the fork but not too liqudish so that it can’t stand alone as a separate layer. Finally, garnish your parfait with some more chocolate chunks and peanuts and serve.
