1 cup sugar (can be replaced with natural cane sugar)

2 tbsp honey
½ cup butter, softened
2 tsp vanilla extract
2 tbsp matcha green tea powder
½ tsp baking soda
¼ tsp baking powder

DIRECTIONS
In a large mixing bowl, combine flour, sugar, matcha green tea powder, baking soda, baking powder, and salt. Mix well and add eggs and butter. Beat well on high speed, for 2 minutes. Gradually add honey and vanilla extract. Finally, add almonds and continue to beat until fully incorporated, for 2-3 minutes.
Preheat the oven to 350 degrees. Line some parchment paper over a baking sheet. Scoop out about two tablespoons of the mixture onto a baking sheet, 2 inches apart.
Bake for 12-13 minutes. Remove from the oven and chill to a room temperature before serving.
These cookies can stand in a dark place up to a week so you can prepare a couple of batches and enjoy them every day.
